Best Pizza in Burlington, VT

Around Burlington, VT there are endless pizzerias all around the quaint Queen City. There’s Panacea, American Flatbread, Pascolo, and much more. But the one pizzeria that stands out the most is Pizzeria Verita on Saint Paul Street, which I work at. Verita was created by owners John Rao & Leslie Wells. They both carefully perfected their recipes before opening this beautiful restaurant. It took John, himself, six years to perfect the famous John Dough recipe. Along with this perfect dough, these pies would be as good without the classic Neapolitan, wood fire oven.

Upon entering Pizzeria Verita it gives this warm, rustic, welcoming feeling.

There are various places to sit, that will always give you the same amazing experience. You also have the pleasure of having the ability to watch your food being crafted by the welcoming cooks. One of the interesting spots to sit at would have to be the pizza bar. At this setting, it allows you to enjoy one of their famous cocktails, along with having a friendly conversation with one of the many pizza cooks. There they will teach you all about Karen (the oven), where the wood comes from, what type, their favorite pizza, and all about the ingredients.

 

Looking at the menu might make you come overwhelmed with the amount of different pies to order. There are pizzas with ingredients that you might not have ever thought to put on top of a pie before, but they make it work. Some of the pizzas include:

  • Mais
  • Fig & Gorgonzola
  • Salamone Affumicato
  • Cherry Amore.

One suggestion when ordering though is to ask about the specials. This is because these are usually some of the best pies they have to over. Even though they will only be there for a short while. All of these pizzas are cooked at around 900 degrees and are crafted by traditional Neapolitan technique. The dough is pushed out into a nice light thin crust, in order to push out all of the air that might be inside. Within 2 minutes and 30 seconds your perfect, traditional pizza is fresh, hot out of the oven. Each bite it will make you crave the pizza more and more.

If this doesn’t have your mouth watering already you’ll have to try one of their many traditional cocktails. When looking at the extensive list you might find yourself wondering what to order. In my opinion, the best craft cocktail they have to offer has to be The Last Word. It features a combination of gin, maraschino liqueur, chartreuse, and fresh squeezed line juice, along with the zest of a lemon, lime, or orange peal. If cocktails aren’t your strong game, there is no need to worry they always have twelve different craft beers on tap and a phenomenal wine list.

At the end of the night of your fine dining experience, you’ll have to finish it off with any of their three deserts. These include the in-house tiramisu, cannoli, and their famous Nutella pizza. Screen Shot 2016-02-03 at 10.49.38 AM.pngBefore coming to this place I had never heard of a dessert pizza, but these guys nailed it. You have to try it when you visit, otherwise, you’ll regret it. This pizza features a carefully rolled out, very thin dough. That is then filled with Nutella that is then covered and placed into the oven. At about half way through cooking, the cook will take it out of the oven and coat it with powdered sugar. This allows for the treat to have a nice caramelized finish. Once it is completed the expoditor gives it their own plating design and is again covered in powdered sugar and drizzled with in-house chocolate sauce. It is always an amazing treat.
